At the stove is Chef Wes, whose 36 years in professional kitchens have shaped a lifelong love of honest, seasonal British cooking. Growing up on the North Devon coast, surrounded by the riches of sea, field and countryside, he developed a respect for fresh ingredients that remains at the heart of his cooking today.

His menus celebrate the familiar and the comforting, with a fresh take on British classics. Everything starts with good ingredients, prepared with care and allowed to speak for themselves.
